Amandine Milic, a tour guide, invites you to discover the history, traditions, and symbols associated with the olive tree in Provence—a millennia-old tree that shapes the landscape and embodies the values of longevity and peace.

Harvesting and pressing—legacies of ancient techniques—preserve a body of knowledge passed down for centuries. Olive oil is at the heart of Provençal cuisine, from aioli to tapenade, and is used in a variety of traditional ways. It also enriches the region’s intangible cultural heritage, featuring in sayings, proverbs, and literary references. This “green gold” of Provence is a symbol of Mediterranean culture and identity.
